One day is more than enough to see everything at the Texas State Fair, especially if you begin the day early and plan to stay all day. Try to plan to go on opening day. It is the very best day to attend because it is the least crowded and everything is fresh and clean, from the frying oils, used to make most treats, to the restrooms.
